Honey Garlic Chicken Thighs - Sticky, Savory, and Weeknight Easy

Ingredients
  

  • 6 chicken thighs (bone-in, skin-on for crispy edges; or boneless, skinless for faster cooking)
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for extra browning and a light crust)
  • 1–2 tablespoons neutral oil (like canola or avocado)
  • 4 cloves garlic, minced (about 1 1/2 tablespoons)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon unsalted butter (optional, for a silky finish)
  • 1/4–1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon toasted sesame oil (optional, for nutty depth)
  • Sliced green onions and sesame seeds (for garnish)
  • Cooked rice or steamed vegetables, for serving

Method
 

  1. Prep the chicken. Pat the thighs dry with paper towels. Season both sides with salt and pepper. If using cornstarch, dust lightly and shake off any excess. This helps with browning and makes the sauce cling.
  2. Sear the chicken. Heat oil in a large skillet over medium-high. Place the chicken skin-side down (if using skin-on) and cook until deeply browned, about 5–7 minutes. Flip and cook another 4–6 minutes. Transfer to a plate; the chicken will finish cooking in the sauce.
  3. Make the sauce base. Turn heat to medium-low. If the pan looks dry, add a teaspoon of oil. Add the garlic and cook 30–45 seconds until fragrant—don’t let it brown.
  4. Deglaze and combine. Whisk in honey, soy sauce, and vinegar. Scrape up any browned bits from the pan—they add flavor. Stir in red pepper flakes and sesame oil if using.
  5. Simmer the chicken. Return thighs to the pan and coat with sauce. Reduce heat to medium and simmer, turning occasionally, until chicken is cooked through and the sauce thickens and turns glossy, 6–10 minutes. Target an internal temperature of 175°F for thighs; they’re more tender than at 165°F.
  6. Finish the sauce. Stir in butter to make the sauce silky and balanced. Taste and adjust with a splash of vinegar or a pinch of salt if needed.
  7. Rest and garnish. Let the chicken rest off heat for 3 minutes. Spoon extra sauce over top. Garnish with green onions and sesame seeds.
  8. Serve. Plate with rice, noodles, or steamed greens. Make sure to drizzle all that sticky sauce over the sides.
