Preheat and prep: Heat the oven to 375°F (190°C).
Lightly oil a 9x13-inch baking dish.
Sauté the vegetables: Warm olive oil in a large skillet over medium heat. Add onion and bell pepper with a pinch of salt. Cook 5–6 minutes until softened and fragrant.
Season the base: Stir in taco seasoning, cumin, and smoked paprika.
Cook 30 seconds to bloom the spices. Add salsa and diced tomatoes; simmer 2 minutes.
Combine the filling: In a large bowl, mix chicken, cooked rice, black beans, corn, and the warm salsa mixture. Fold in Greek yogurt until creamy.
Taste and adjust salt and pepper.
Layer and top: Spread the mixture evenly in the baking dish. Sprinkle the shredded cheese over the top in a smooth layer.
Bake: Bake uncovered for 18–22 minutes, until the cheese is melted and the edges are bubbling. For a golden top, broil 1–2 minutes at the end, watching closely.
Garnish and serve: Rest 5 minutes.
Top with chopped cilantro and green onions. Serve with lime wedges for a bright finish.
