Check doneness: Aim for an internal temperature of 145°F (63°C). The bites should be slightly rosy in the center and very juicy.
Rest: Let the pork rest for 3–5 minutes.
This helps the juices redistribute.
Finish and serve: Toss with a squeeze of lemon or a spoonful of BBQ sauce, or sprinkle with parsley. Serve with rice, potatoes, or a simple salad.
